I gave "Are you Jew?" its' first tasting today. I put a little bit of it in a cup, and swirled it around a bit. It smelled okay. No floaties. Excellent. I took a sip it was a lot sweeter than I imagined it would be, and it was carbonated! Huh? Wine isn't supposed to be carbonated. I checked online for remedies to de-fizz wine. One clever method was to siphon it through a vacuum to remove the carbonation. Very cool, but not too practical for me. A simpler method is to literally stir the crud out of it, which is what I chose to do. When I stirred it all the bubbles came to the top and gave my wine a nice head to it. It looked like beer. I have to stir it now every day for about a week or so. I get to bottle it in about two months in some really cool bottles I got from Ikea.
